Easy Chicken Enchiladas with Creamy Sauce
To make this delicious dish, you'll need the following ingredients:
- 3 cups of tender shredded chicken
- A 10-ounce can of rich cream of chicken soup
- 1 cup of tangy sour cream
- 1 cup of your preferred salsa - mild or medium heat works great
- 2 cups of shredded cheese - a blend of cheddar or Mexican cheese is perfect, and you'll want to set some aside for later
- 8 large flour tortillas, about 8 inches in diameter
- A pinch of savory garlic powder and onion powder adds depth
- Half a teaspoon of warm cumin and salt brings out the flavors
- A quarter teaspoon of black pepper adds a nice kick
- Fresh cilantro leaves make a lovely garnish, if you like
Let's get started with the recipe. Here's how you can make it happen:
First, preheat your oven to 350 degrees Fahrenheit - that's 175 degrees Celsius, just in case you're using the metric system. While that's warming up, take a 9x13 baking dish and give it a good greasing. You don't want your enchiladas sticking to the pan, after all.
Next, mix together your shredded chicken, a cup of cheese, some garlic powder, onion powder, cumin, salt, and pepper in a bowl. Get in there with a spoon and really combine everything until it's nice and smooth.
In another bowl, whisk together your cream of chicken soup, sour cream, and salsa. You want it to be nice and creamy, so make sure you get rid of any lumps. Once it's smooth, you're good to go.
Now it's time to assemble your enchiladas. Spread about half a cup of that delicious sauce on the bottom of your baking dish. Then, take a tortilla, add some of that chicken mixture to the center, roll it up, and place it seam-side down in the dish. Repeat that process until you've used up all your ingredients.
Once your enchiladas are all assembled, pour the rest of the sauce over them and sprinkle with the remaining cheese. Cover the dish with foil and pop it in the oven for about 25 minutes. Then, remove the foil and let it bake for another 10 minutes, or until it's bubbly and golden brown.
When it's done, garnish with some fresh cilantro and serve it up while it's still warm. Enjoy!
